Ingredients

  • 3 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/4 cups oil
  • 1 1/2 teaspoons cinnamon
  • 2 cups sugar
  • 1 egg
  • 3 cups grated fresh apples
  • 2 teaspoons vanilla
  • 1 cup chopped pecans

Instructions

  1. Sift the flour, baking soda, salt, and cinnamon together.
  2. Cream the oil, sugar, and egg until well blended.
  3. Gradually fold the dry sifted ingredients into the creamed mixture, alternating with the grated apples and vanilla, beginning and ending with dry ingredients.
  4. Stir in the chopped pecans.
  5. Pour the batter into a buttered 10-inch tube or Bundt pan.
  6. Bake at 325°F (163°C) for 1 hour and 15 minutes.
  7. Allow the cake to cool in the pan for 10 minutes before removing.
