Texas Short Ribs

Ingredients

  • 3 to 4 lb. beef short ribs or pork if preferred
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 (8 oz.) can tomato sauce
  • 1/3 c. brown sugar
  • 1/4 c. catsup
  • 1/4 c. vinegar
  • 2 Tbsp. prepared mustard
  • 1/2 c. onion, chopped
  • 1 garlic clove, minced
  • 1 Tbsp. chili powder

Instructions

  1. Place short ribs in large frying pan or Dutch oven; cover tightly and cook slowly for 1 1/2 hours, turning occasionally. Season with salt and pepper.
  2. Combine tomato sauce, brown sugar, catsup, vinegar, mustard, onion, garlic and chili powder in saucepan and simmer 5 minutes, stirring to blend.
  3. Remove each short rib from pan.
  4. Dip in sauce to coat all sides and place on rack in broiler pan (4 to 5 inches from heat) or on grill top over charcoal.
  5. Cook at moderate temperature, brushing with sauce and turning occasionally, 20 to 30 minutes or until done.
