Ingredients

  • 1 1/2 lb. ground beef
  • 1 tsp. seasoned salt
  • 1 pkg. (1 1/4 oz.) taco seasoning mix
  • 1 can (14 1/2 oz.) diced tomatoes
  • 1 can (15 oz.) tomato sauce
  • 1 can (4 oz.) chopped green chilies
  • 2 c. (16 oz.) small curd cottage cheese
  • 2 eggs
  • 12 flour tortillas
  • 3 1/3 to 4 c. shredded Monterey Jack cheese

Instructions

  1. In a large skillet, brown the ground beef; drain excess fat.
  2. Add seasoned salt, taco seasoning mix, diced tomatoes, tomato sauce, and chopped green chilies; mix well.
  3. Simmer uncovered for 15 to 20 minutes.
  4. Combine cottage cheese and beaten eggs in a bowl.
  5. In a greased 13 x 9 x 2-inch baking dish, layer half of the meat sauce, half of the torn tortillas, half of the cottage cheese mixture, and half of the shredded Monterey Jack cheese.
  6. Repeat the layers with the remaining ingredients.
  7. Bake uncovered at 350°F for 30 minutes or until bubbly.
  8. Let stand for 10 minutes before serving.
