Ingredients

  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 Tbsp. vegetable oil
  • 1 (28 oz.) can whole tomatoes
  • 1 (10 1/2 oz.) can condensed beef broth
  • 1 (10 1/2 oz.) can condensed chicken broth
  • 1 (10 1/2 oz.) can condensed tomato soup
  • 1 c. water
  • 1/2 c. Pace picante sauce
  • 2 tsp. Worcestershire sauce
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 c. (2 oz.) shredded Cheddar cheese
  • 4 corn tortillas, cut into 1/2-inch wedges

Instructions

  1. Cook onion and garlic in oil in a Dutch oven until onion is tender, but not brown.
  2. Drain well.
  3. Drain and coarsely chop tomatoes, reserving juice.
  4. Add tomatoes and juice to the Dutch oven along with remaining ingredients except tortillas and cheese.
  5. Bring to a boil.
  6. Reduce heat and simmer, uncovered, for 1 hour.
  7. Add tortillas and continue simmering for 10 minutes.
  8. Ladle into soup bowls and sprinkle with shredded Cheddar cheese.
