Ingredients

  • 3 1/2 cups plain flour
  • 3 cups sugar
  • 1 cup Wesson oil
  • 2 tsp. soda
  • 4 eggs
  • 2 cups sweet potatoes, cooked and mashed
  • 2 tsp. vanilla
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 cup water
  • 1 cup nuts

Instructions

  1. Mix the Wesson oil, eggs, vanilla, and water together.
  2. In a separate bowl, combine the flour, sugar, soda, cinnamon, and nutmeg.
  3. Gradually add the dry ingredients to the liquid mixture and stir until well blended.
  4. Fold in the cooked and mashed sweet potatoes and nuts.
  5. Pour the batter into a greased bundt pan or three small loaf pans.
  6. Bake at 350°F (175°C) until a toothpick inserted into the center comes out clean, about 60 minutes.
