Ingredients

  • 1 lb. coarsely ground or finely chopped meat

  • 1 tsp. black pepper
  • 1 Tbsp. chili powder
  • 1 (12 oz.) can or bottle beer
  • 1 (15 oz.) can tomato sauce
  • 1 (15 oz.) can kidney beans, drained

Instructions

  1. In a large kettle, brown the meat in oil.
  2. Add chopped onions, minced garlic, black pepper, chili powder, and beer.
  3. Simmer for 5 minutes.
  4. Add tomato sauce and drained kidney beans; simmer, stirring occasionally, for 15 minutes.
  5. Place crushed dried chili peppers on an 8-inch square of cheesecloth, 3 layers thick, and tie at the top with string.
  6. Submerge the bag in the chili; stir and let simmer for 15 minutes more.
  7. Remove the bag from the chili.
  8. If you want really hot chili, put on rubber gloves and squeeze juice from the bag into the chili.
  9. Warning: The more you squeeze, the hotter it gets!
