Ingredients

  • 1 1/2 lb. small elbow macaroni
  • 1/2 lb. Cheddar cheese, grated
  • 1/2 lb. Fontina cheese, grated
  • 8 Tbsp. butter
  • 4 Tbsp. flour
  • 2 c. milk
  • 1 tsp. salt
  • 1 large egg
  • 1/2 tsp. paprika
  • 1/2 c. bread crumbs
  • 3 Tbsp. grated Parmesan cheese
  • 2 Tbsp. extra virgin olive oil

Instructions

  1. Preheat oven to 350°F.
  2. Cook the macaroni according to package instructions; drain and place in a buttered 3-quart casserole dish.
  3. Sprinkle the reserved Cheddar and Fontina cheeses on top of the pasta, lightly stirring with a fork.
  4. In a saucepan, melt the butter over medium heat.
  5. Add flour to the melted butter and whisk until smooth and bubbling, about 1 minute.
  6. Gradually whisk in the milk, stirring constantly until the sauce thickens.
  7. Remove from heat and stir in salt, grated Parmesan, and the egg until well combined.
  8. Pour the cheese sauce over the pasta and cheese mixture, stirring gently to coat.
  9. In a small bowl, combine the bread crumbs, paprika, and olive oil to make the topping.
  10. Sprinkle the breadcrumb mixture evenly over the casserole.
  11. Bake in the preheated oven for 25-30 minutes, until bubbly and golden on top.
