Ingredients

  • 2 Tbsp. butter or margarine
  • 2 Tbsp. olive oil
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. minced fresh thyme or 1 tsp. dried thyme
  • 1 tsp. grated lime peel
  • 1 garlic clove, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 chicken breast halves
  • 4 chicken thighs

Instructions

  1. In a small saucepan, over low heat, melt butter in olive oil; add lime juice, thyme, lime peel, garlic, salt, and pepper.
  2. Place chicken on a greased broiler pan. Brush with the sauce.
  3. Broil, basting frequently, 6 to 7 inches from the heat, for 15 to 20 minutes on each side or until the chicken juices run clear.
