Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 3 cups flour
  • 1/2 cup cornstarch
  • 2 tablespoons baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 teaspoons lemon extract

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift together flour, cornstarch, baking soda, and salt.
  4. Alternately add dry ingredients and milk to the creamed mixture, beginning and ending with dry ingredients.
  5. Mix in lemon extract.
  6. Pour batter evenly into two greased 9-inch layer cake pans.
  7. Bake at 350°F for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
