- Wash and pick over the beans; cover with cold water.
- Add baking soda and soak overnight.
- Next morning, rinse beans and parboil in fresh water until skins wrinkle.
- Drain off bean water and retain.
- Place the whole peeled onion in the bottom of the bean pot.
- Add beans, maple syrup, and dry mustard.
- Score the salt pork and place it on top of the beans.
- Add the bean water to the pot and cover.
- Cook in a slow oven at 325°F for 8 hours.
- Check periodically and add bean water as needed.
- During the last hour, cook uncovered so the pork will brown.
