Ingredients

  • 1 c. water
  • 1/2 c. butter or margarine
  • 1 c. sifted all-purpose flour
  • dash of salt
  • 4 eggs
  • shrimp or salad salad
  • parsley or softened cream cheese

Instructions

  1. Bring water to a boil.
  2. Add butter or margarine, stirring until melted.
  3. Add flour and salt all at once.
  4. Stir well until mixture is smooth and forms a soft ball.
  5. Cool mixture slightly.
  6. Add eggs, one at a time, beating well after each addition.
  7. After last addition, continue beating until mixture is shiny.
  8. Drop batter by teaspoonfuls onto lightly greased baking sheet to make 36 small puffs.
  9. Bake at 375° for 50 minutes.
  10. Allow to cool in a warm place away from drafts.
  11. When cool, fill with shrimp or salmon salad. Decorate with parsley or softened cream cheese in a flower design. Yields 36 Tiny Party Puffs.
