- Scrub the mussels thoroughly.
- Simmer the mussels with shallots, onions, parsley, salt, pepper, white wine, butter, bay leaf, and thyme for 5 to 10 minutes until the shells open.
- Strain the liquid from the mussels, discarding the shells and mussels.
- Bring the strained liquid to a boil.
- Add the heavy cream and beaten egg yolk to the liquid, stirring to thicken slightly without boiling.
