Ingredients

  • 1 cup toasted coconut
  • 2 cups flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 1 cup milk
  • 1/2 cup melted shortening or oil
  • 1 teaspoon vanilla

Instructions

  1. Mix dry ingredients (flour, sugar, baking powder, salt) well.
  2. Add wet ingredients (beaten egg, milk, melted shortening or oil, vanilla) all at once. Mix well.
  3. Pour batter into a greased 9 x 5-inch loaf tin.
  4. Bake at 350°F for 1 hour or until tested done.
  5. As an alternative, pour batter into muffin tins and bake at 400°F for 20 minutes.
