Ingredients

  • 1/2 onion, chopped
  • 2 Tbsp. oil
  • 1 cup mushrooms
  • 2 cloves garlic, minced
  • 1 block tofu, crumbled
  • 1/4 cup chopped green chilies
  • 1 tsp. salt
  • 2 Tbsp. soy sauce
  • 1/2 cup grated Monterey Jack cheese

Instructions

  1. Sauté onion, garlic, and mushrooms in 2 tablespoons of oil until tender.
  2. In a large bowl, mix the crumbled tofu, chopped green chilies, salt, soy sauce, and the sautéed mixture.
  3. Gently fold the sautéed vegetables into the tofu mixture.
  4. Spoon the mixture into an oiled loaf pan.
  5. Top with 1/2 cup grated Monterey Jack cheese.
  6. Bake at 350°F (175°C) for 30 minutes.
