Ingredients

  • 8 oz. pasta
  • 6 cups spaghetti sauce
  • 1 cup sliced mushrooms
  • 1 lb. firm tofu
  • 2 oz. grated Parmesan cheese
  • 2 oz. shredded Mozzarella cheese
  • 2 oz. shredded Colby or Cheddar cheese

Instructions

  1. Cook pasta according to package directions.
  2. Combine spaghetti sauce with cooked pasta and pour into a 9 x 13-inch casserole pan.
  3. In a separate bowl, combine shredded or mashed tofu with grated Parmesan, shredded Mozzarella, and shredded Colby or Cheddar cheese.
  4. Cover the pasta mixture with the tofu and cheese mixture.
  5. Bake for 30 minutes at 350°F.
