Instructions

  1. Heat olive oil in a pan.
  2. Saute chopped onion, minced garlic, sliced carrots, and sliced mushrooms until tender.
  3. Combine cooked vegetables with cooked and drained frozen spinach, low-fat ricotta or cottage cheese, and shredded mozzarella.
  4. In a separate container, mix low sodium tomato sauce with basil leaf and oregano leaf.
  5. Spray a 9 x 13-inch pan with cooking spray.
