Ingredients

  • 2 cakes firm tofu
  • 1/4 c. apple cider vinegar
  • 1 tsp. Dijon mustard
  • 1/4 c. cold pressed oil
  • 1 tsp. salt
  • hot pepper or minced garlic to taste
  • 3 pickles (medium-size)
  • 6 scallion tops
  • 1 bunch fresh carrots

Instructions

  1. Steam the carrots and let them cool.
  2. Make the salad dressing by mixing vinegar, oil, mustard, salt, hot pepper or minced garlic to taste.
  3. Mash the tofu with a fork and mix it with the dressing.
  4. Let the tofu marinate in the dressing for 10 minutes.
  5. Chop the cooled carrots.
  6. Mix the marinated tofu, chopped carrots, pickles or capers, chopped scallion tops, and mayonnaise or sour cream together before serving.
