Ingredients

  • 2 medium onions
  • 1/4 cup olive oil
  • 5 chopped tomatoes or 1 can stewed tomatoes
  • 2 bay leaves
  • 2 to 3 garlic cloves, minced
  • 1/2 cup water
  • 2 pounds raw shrimp
  • 6 oz. feta cheese
  • 2 teaspoons sugar

Instructions

  1. Saute onions in olive oil until translucent.
  2. Add chopped tomatoes, bay leaves, minced garlic, water, and sugar.
  3. Cover and simmer for 1 hour.
  4. Add peeled shrimp and cook for an additional 5 minutes.
  5. Transfer mixture to a casserole dish and crumble feta cheese on top.
  6. Bake at 375°F (190°C) for 10 minutes until heated through and feta is slightly browned.
