Tomato Basil Muffins
Ingredients
- 1 1/4 cups flour ⓘ
- 1/2 cup cornmeal ⓘ
- 1/4 cup sugar ⓘ
- 2 teaspoons baking powder ⓘ
- 1/2 teaspoon salt ⓘ
- 1 egg ⓘ
- 1/4 cup oil
- 3/4 cup milk ⓘ
- 1/4 cup fresh basil, minced ⓘ
- 1/4 cup tomatoes, diced ⓘ
- 1/4 cup button mushroom, diced ⓘ
- 1 tablespoon fresh parsley, minced ⓘ
- 1/4 cup ham, diced (optional, substitute) ⓘ
- 1/4 cup mozzarella cheese, shredded (optional, substitute) ⓘ
- 2 garlic cloves, minced (optional, substitute) ⓘ
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Mix everything together and put 0.25 cups in each greased muffin cup.
- Bake for 18 minutes.
