Ingredients

  • 1 cup tomato juice
  • 3 tablespoons tapioca
  • 1 cup grated Cheddar cheese
  • 1/2 teaspoon salt
  • a little pepper
  • 1 tablespoon butter
  • 3 large eggs

Instructions

  1. Cook tomato juice and tapioca together for one minute, stirring constantly.
  2. Add grated Cheddar cheese, salt, pepper, and butter; stir until cheese is melted. Cool slightly.
  3. Stir in well-beaten egg yolks and fold in stiffly beaten egg whites.
  4. Turn the mixture into a greased casserole and place it in a pan of hot water.
  5. Bake in a 350°F oven for about 45 minutes, or until puffed and golden on top.
  6. Serve with green salad and French bread.
