Ingredients

  • 7 lb. green tomatoes, sliced
  • 4 lb. sugar (white)
  • 1 lb. raisins
  • 1 pt. vinegar
  • 1/2 tsp. cloves
  • 1 tsp. cinnamon

Instructions

  1. Place sliced green tomatoes in salt brine and let soak for 2 hours.
  2. Drain and rinse the tomatoes.
  3. Cook the tomatoes and raisins with sugar, vinegar, cloves, and cinnamon until thick.
  4. Allow to cool and store without sealing.
  5. Serve as a condiment with cold roast beef or pork.
