Ingredients

  • 8 uncooked curly edge lasagna pieces
  • 2 Tbsp olive oil
  • 1/4 cup finely chopped onion
  • 1 3/4 cups stewed tomatoes
  • 2/3 cup tomato paste
  • 1 3/4 cups ricotta cheese
  • 1 1/4 cups frozen chopped spinach, thawed
  • 1 cup shredded mozzarella cheese
  • 1 egg, slightly beaten
  • 2 Tbsp grated Parmesan cheese
  • 1/2 tsp salt

Instructions

  1. Cook the pasta according to package directions; drain.
  2. Lay the cooked pasta flat on foil to cool.
  3. Preheat oven to 350°F (175°C).
  4. In a skillet, heat olive oil.
  5. Add chopped onion; cook, stirring frequently, until tender.
  6. Add stewed tomatoes and tomato paste; heat to boiling.
  7. Reduce heat; simmer for 5 minutes, stirring to break up the tomatoes.

  9. In a bowl, stir together ricotta cheese, thawed chopped spinach, 1/2 cup shredded mozzarella cheese, beaten egg, grated Parmesan cheese, salt, and pepper.
  10. Spread 3/4 cup of the tomato mixture at the bottom of a 12 x 8-inch baking dish.
  11. Spread about 1/3 cup of cheese filling on each cooked noodle, keeping within 1 inch of the ends, then roll up.
  12. Place the roll-ups seam side down in the prepared dish; top with remaining tomato mixture.
  13. Cover the dish and bake for 35 minutes, or until hot and bubbly.
  14. Sprinkle with remaining 1/2 cup shredded mozzarella cheese and continue baking until cheese melts.

Tips & Substitutions

For a richer flavor, consider adding Italian herbs like oregano or basil to the cheese filling. If you don’t have ricotta, cottage cheese can be a good substitute. To save time, you can use pre-cooked lasagna noodles. Ensure to drain the spinach well to avoid a watery filling. This dish can easily be adapted for a meat version by adding cooked ground beef or sausage to the tomato mixture.

Serving Suggestions

Serve the lasagna roll-ups with a fresh side salad or garlic bread to complement the flavors. A sprinkle of fresh basil or parsley on top before serving adds a nice touch. These roll-ups pair beautifully with Dinner Rolls Italiano for a complete meal. For a heartier option, consider serving them alongside a side of roasted vegetables.

Storage & Reheating

Store leftover lasagna roll-ups in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 350°F (175°C) for about 20 minutes, covered with foil to prevent drying out. They can also be reheated in the microwave, though the oven method maintains better texture.

Frequently Asked Questions

What can I substitute for spinach?

If you’re not a fan of spinach, you can replace it with other leafy greens like kale or Swiss chard, or even finely chopped broccoli. Just make sure to cook and drain any excess moisture from the greens before adding them to the cheese mixture to keep the filling from becoming too watery.
