A refreshing tomato salad ring featuring vibrant flavors of tomato and herbs, perfect for summer gatherings and served chilled on a bed of crisp lettuce.

Ingredients

  • 4 c. tomato juice
  • 1/4 tsp. white pepper
  • 1/4 tsp. basil, chopped
  • 6 spring onions, finely chopped
  • 2 envelopes unflavored gelatin
  • 1/4 c. cold water
  • 1 tsp. horseradish
  • 2 Tbsp. lemon juice
  • lettuce leaves

Instructions

  1. Combine tomato juice, white pepper, chopped basil, and finely chopped spring onions; heat to boiling.
  2. Reduce heat to simmer; cook for 10 minutes. Strain out onions and keep the liquid hot.
  3. Soak gelatin in cold water for 5 minutes.
  4. Add soaked gelatin to hot tomato juice and stir until dissolved.
  5. Add horseradish, lemon juice, and remaining ingredients; mix well.
  6. Pour the mixture into a mold and chill until firm.
  7. Arrange lettuce leaves on a serving platter.
  8. Unmold the salad into the lettuce leaves and serve.
