Tomato Salad Ring

- Combine tomato juice, white pepper, chopped basil, and finely chopped spring onions; heat to boiling.
- Reduce heat to simmer; cook for 10 minutes. Strain out onions and keep the liquid hot.
- Soak gelatin in cold water for 5 minutes.
- Add soaked gelatin to hot tomato juice and stir until dissolved.
- Add horseradish, lemon juice, and remaining ingredients; mix well.
- Pour the mixture into a mold and chill until firm.
- Arrange lettuce leaves on a serving platter.
- Unmold the salad into the lettuce leaves and serve.
