Ingredients

  • 5 medium tomatoes
  • 1/2 cup olive oil
  • 2 tablespoons wine vinegar
  • 1 tablespoon finely cut fresh basil or dried basil
  • 1/4 teaspoon finely cut garlic
  • 1 teaspoon salt
  • freshly ground pepper
  • 2 tablespoons thinly sliced scallions
  • 1 tablespoon chopped parsley

Instructions

  1. Mix all ingredients except tomatoes in a bowl.
  2. Pour the dressing over the cut tomatoes and toss gently.
  3. Serve immediately.
