Ingredients

  • 3 Tbsp. margarine
  • 1 lb. tomatoes
  • 1 tsp. lemon juice
  • 1 tsp. dried basil
  • 1 lb. small okra
  • 1 medium onion, chopped
  • 1 Tbsp. light brown sugar
  • 1/4 tsp. salt

Instructions

  1. In a saucepan, heat the margarine.
  2. Add chopped onion and cook until wilted.
  3. Stir in light brown sugar.
  4. Add tomatoes, lemon juice, salt, and dried basil. Bring to boiling point.
  5. Add okra to the mixture.
  6. Cover and boil gently until okra is tender.
