Ingredients

  • 1 lb. ground beef
  • 16 oz. canned chopped tomatoes
  • 3/4 cup picante sauce
  • 1 tsp. ground cumin
  • 1/2 tsp. salt
  • 12 tortillas
  • 2 cups shredded Cheddar cheese
  • 2 cups shredded lettuce
  • 1 large tomato, chopped
  • 1 ripe avocado, peeled and sliced

Instructions

  1. Brown the ground beef; drain excess fat.
  2. Stir in canned chopped tomatoes, picante sauce, ground cumin, and salt; simmer for 5 to 10 minutes until most of the liquid evaporates.
  3. Cover the bottom and sides of a 14-inch pizza pan with tortillas; spread the meat mixture evenly over the tortillas.
  4. Bake at 350°F for 20 minutes.
  5. Sprinkle with one cup of shredded cheese; return to the oven until the cheese is melted.
  6. Arrange shredded lettuce, remaining cheese, chopped tomato, and sliced avocado over the top.
  7. Cut into wedges and serve with additional picante sauce.
