Ingredients

  • 2 large slices whole wheat bread, crusts removed
  • 2 large slices white bread, crusts removed
  • 1/4 cup butter, softened
  • 2 teaspoons Thousand Island dressing
  • 2 green lettuce leaves, finely shredded
  • 2 hard-boiled eggs, shelled and sliced
  • 5 slices tomato
  • salt

Instructions

  1. Spread all slices of bread with butter, then spread the whole wheat slices with Thousand Island dressing.
  2. Cover one-third of the area of the whole wheat slices with shredded lettuce, reserving a little for later.
  3. Remove egg yolks from the whites and arrange yolk slices over the center area of the bread, reserving a little.
  4. Place five slices of tomato over the remaining area on the bread.
  5. Season with salt and pepper.
  6. Using a small 3/4-inch plain or fluted rounded cookie cutter, cut out six holes from each slice of white bread.
  7. Place bread, buttered sides down, over the fillings and press together firmly.
  8. Cut each sandwich neatly in half to form 'traffic lights'.
  9. Chop the reserved lettuce and tomato, and slice the egg yolk; use to fill the relevant holes in the sandwich.
  10. Garnish with a few green onion flowers.
