Ingredients

  • 2 1/2 cups flour
  • 2 cups packed brown sugar
  • 1/2 cup apple juice
  • 2 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon allspice
  • 1 teaspoon salt
  • 1 cup margarine or butter, softened
  • 1 (8 oz.) jar unsweetened applesauce
  • 3 large eggs
  • confectioners sugar (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 10-inch Bundt pan.
  3. In a large bowl, measure all ingredients except confectioners sugar.
  4. Using a mixer at low speed, beat until well blended.
  5. Increase speed to high and beat for 2 minutes.
  6. Pour batter into the prepared Bundt pan.
  7. Bake for about 1 hour or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before removing from the pan.
  9. Top with confectioners sugar if desired before serving.
