Applesauce Gingerbread Cake

Ingredients
- 2 1/2 cups flour ⓘ
- 2 cups packed brown sugar ⓘ
- 1/2 cup apple juice ⓘ
- 2 teaspoons ground ginger ⓘ
- 2 teaspoons cinnamon ⓘ
- 2 teaspoons baking soda ⓘ
- 1/2 teaspoon allspice ⓘ
- 1 teaspoon salt ⓘ
- 1 cup margarine or butter, softened ⓘ
- 1 (8 oz.) jar unsweetened applesauce ⓘ
- 3 large eggs ⓘ
- confectioners sugar (optional) ⓘ
Instructions
- Preheat oven to 350°F (175°C).
- Grease a 10-inch Bundt pan.
- In a large bowl, measure all ingredients except confectioners sugar.
- Using a mixer at low speed, beat until well blended.
- Increase speed to high and beat for 2 minutes.
- Pour batter into the prepared Bundt pan.
- Bake for about 1 hour or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before removing from the pan.
- Top with confectioners sugar if desired before serving.
