Trail Mix Oatmeal

Ingredients

  • 2 cups flour
  • 2 cups rolled oats
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 2 sticks unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1/2 cup white chocolate chips
  • 1 1/4 cups trail mix

Instructions

  1. Preheat oven to 350. In a medium bowl stir together the flour, oats, salt, baking soda and cinnamon.
  2. In a mixer cream the butter and sugar. Beat in the eggs, one at a time, then add the vanilla. Add the flour mixture and mix on low speed until combined. Stir in the chocolate chips and trail mix until incorporated.
  3. I use a small ice cream scoop to form uniform balls of dough. You can also just use a regular spoon and portion accordingly on a baking sheet lined with a silpat or have it lightly greased. Bake for about 12 to 14 minutes, don't overbake. You want them very light brown. Cool on wire rack.
