Triple Celery Bisque

Ingredients
- 1/2 Tbsp. olive oil ⓘ
- 1 medium celery root (about 1 lb.), peeled and chopped ⓘ
- 2 small potatoes, peeled ⓘ
- 1 medium onion, chopped ⓘ
- 1 ribbed celery, chopped ⓘ
- 1 medium leek, trimmed, washed and thinly sliced ⓘ
- 1/2 tsp. salt ⓘ
- 1/2 tsp. crushed rosemary ⓘ
- 1/8 tsp. pepper ⓘ
- 1 Tbsp. fresh thyme leaves or 1 tsp. dried
- 2 c. water, divided ⓘ
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped celery root, potatoes, onion, celery, and leek; sauté until softened, about 5 minutes.
- Season with salt, rosemary, pepper, and thyme; stir to combine.
- Pour in 2 cups of water, bring to a gentle boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth; if desired, strain for an extra silky texture.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with a swirl of cream or fresh herbs if desired.
