Ingredients

  • 1/2 Tbsp. olive oil
  • 1 medium celery root (about 1 lb.), peeled and chopped
  • 2 small potatoes, peeled
  • 1 medium onion, chopped
  • 1 ribbed celery, chopped
  • 1 medium leek, trimmed, washed and thinly sliced
  • 1/2 tsp. salt
  • 1/2 tsp. crushed rosemary
  • 1/8 tsp. pepper
  • 1 Tbsp. fresh thyme leaves or 1 tsp. dried
  • 2 c. water, divided

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped celery root, potatoes, onion, celery, and leek; sauté until softened, about 5 minutes.
  3. Season with salt, rosemary, pepper, and thyme; stir to combine.
  4. Pour in 2 cups of water, bring to a gentle boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
  5. Use an immersion blender to puree the soup until smooth; if desired, strain for an extra silky texture.
  6. Taste and adjust seasoning as needed.
  7. Serve hot, garnished with a swirl of cream or fresh herbs if desired.
