Ingredients

  • 1 cup rice (wild, white, brown, etc.)
  • 1 (14 to 16 oz.) can stewed tomatoes
  • 1/2 to 1 lb. sliced fresh mushrooms
  • 1 (4 oz.) can chopped ripe olives
  • 1 medium onion, diced
  • Olive oil (for sautéing)

Instructions

  1. Combine all ingredients in the order given: rice, stewed tomatoes, sliced mushrooms, chopped olives, and sautéed onions.
  2. Pour the mixture into a greased casserole dish.
  3. Bake at 350°F (175°C) for 1 1/2 to 2 hours, covered.
  4. Stir occasionally during baking.
