Ingredients

  • 1/2 cup all-purpose flour
  • salt
  • freshly ground pepper
  • 4 whole brown or rainbow trout, cleaned and dressed
  • 4 tablespoons unsalted butter
  • 1/2 cup roughly chopped hazelnuts
  • 2 tablespoons minced parsley
  • 1 lemon, cut in wedges

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Generously season the flour with salt and pepper, then coat the cleaned and dressed trout with the mixture.
  3. Melt 2 tablespoons of unsalted butter in a shallow, flameproof roasting pan over high heat.
  4. Add the coated fish to the pan and cook for 1 minute on each side.
  5. Transfer the pan to the preheated oven and cook until the fish is cooked through, about 20 to 25 minutes.
  6. Meanwhile, toast the chopped hazelnuts in a dry skillet until golden.
  7. Sprinkle the toasted hazelnuts and minced parsley over the cooked trout before serving.
  8. Serve with lemon wedges on the side.
