Ingredients

  • 5 egg whites
  • 1 tsp cream of tartar
  • 1 cup fruit sugar
  • 5 egg yolks
  • 5 tbsp cold water
  • 7/8 cup presifted all-purpose flour
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 tsp. vanilla

Instructions

  1. Preheat oven to 325°F. Use a 9-inch tube pan and ensure it is free of grease.
  2. Beat egg whites until frothy; sprinkle with cream of tartar; continue beating until just stiff, but not dry.
  3. Gradually beat in 1/4 cup fruit sugar and set aside.
  4. Beat egg yolks until thick; gradually beat in cold water; then beat in 3/4 cup fruit sugar.
  5. Blend or sift together flour and salt.
  6. Sift or sprinkle the dry ingredients over the egg yolk mixture, a little at a time, combining lightly after each addition.
  7. Fold in vanilla.
  8. Carefully fold in the meringue.
  9. Turn the batter into the prepared pan.
  10. Cut through the batter with a knife to eliminate air bubbles.
  11. Bake in the preheated oven for 60 to 75 minutes.
  12. As soon as baked, invert the cake and hang until cold.
  13. Loosen with a knife and carefully shake from the pan to remove.
