Ingredients

  • 3 or 4 thin lemon slices
  • 2 cans (6 1/2 or 7 oz.) tuna, drained and finely flaked
  • 1 cup condensed cream of celery soup
  • 3 slightly beaten egg yolks
  • 1 cup fine cracker crumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped pimento
  • 2 tablespoons snipped parsley
  • 1 tablespoon lemon juice
  • dash of pepper
  • 3 stiffly beaten egg whites

Instructions

  1. Place lemon slices in a row in the bottom of a well-greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
  2. Thoroughly combine the remaining ingredients except egg whites, then fold in the stiffly beaten egg whites.
  3. Spoon the tuna mixture over the lemon slices in the loaf pan.
  4. Bake in a 350°F oven for 45 minutes or until the center of the loaf is firm.
  5. Invert the loaf onto a warm serving platter.
  6. Garnish with parsley and additional lemon slices before serving.
