A quick and creamy tuna casserole with mushroom soup, rice, and cheese, perfect for busy weeknights and satisfying for the whole family.

Ingredients

  • 1 can cream of mushroom soup
  • 2/3 cup evaporated milk
  • 2 1/2 cups cooked rice
  • 2 cans tuna, drained and flaked
  • 1/4 cup onion, finely diced
  • 1/2 cup pimento, finely diced
  • 2 drops Tabasco sauce
  • shredded, grated Cheddar cheese

Instructions

  1. Mix the cream of mushroom soup and evaporated milk together.
  2. Add cooked rice, drained and flaked tuna, finely diced onion, and finely diced pimento to the mixture.
  3. Add two drops of Tabasco sauce and mix everything well.
  4. Pour the mixture into a greased baking dish.
  5. Bake at 350°F (175°C) for 30 minutes or until bubbly.
  6. During the last few minutes of baking, sprinkle shredded Cheddar cheese over the top and let it melt.
