Ingredients

  • 1 can tuna, drained and flaked
  • 1/4 cup chopped onion
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup uncooked Minute rice
  • 1 (10 1/2 oz) can tomato soup
  • 1 1/2 cups water
  • 1 teaspoon sugar
  • 2 eggs

Instructions

  1. In a bowl, combine drained and flaked tuna, chopped onion, chopped parsley, salt, and pepper.
  2. Blend tomato soup, water, and sugar in a skillet and bring to a boil.
  3. Mix 2 tablespoons of the soup mixture into the rice mixture along with the slightly beaten eggs.
  4. Press the rice mixture into twenty 1-inch balls.
  5. Add the rice balls to the boiling soup mixture.
  6. Reduce heat to simmer.
  7. Cover and simmer for 15 minutes, basting occasionally.
