Ingredients

  • 2 Tbsp oleo
  • 1/2 cup onion, diced
  • 1/4 cup celery, diced
  • 1/2 cup water
  • 1 1/2 cup Minute rice
  • 2 (7 oz) cans tuna
  • 1 (9 oz) package frozen mixed vegetables
  • 1 can cream of celery soup
  • 1 Tbsp lemon juice
  • 1/2 tsp salt

Instructions

  1. Sauté diced onion and celery in oleo until fragrant and tender.
  2. Add remaining ingredients: water, Minute rice, tuna, frozen mixed vegetables, cream of celery soup, lemon juice, and salt.
  3. Bring to a boil, then reduce heat and simmer for 10 minutes until heated through.
  4. Serve hot.
