Ingredients

  • 4 (4 oz.) flounder fillets
  • salt
  • pepper
  • 8 medium chopped shrimp
  • 4 Tbsp. backfin crabmeat
  • 2 scallions, chopped
  • 3 or 4 Tbsp. grated Mozzarella cheese
  • melted butter
  • Hollandaise Sauce

Instructions

  1. Sprinkle the flounder fillets with salt and pepper and set aside.
  2. Mix chopped shrimp, backfin crabmeat, chopped scallions, and grated mozzarella cheese.
  3. Spread the seafood mixture on top of each fillet.
  4. Roll each fillet into a turban shape and secure with wooden picks.
  5. Place the rolled fillets upright in a well-greased baking dish.
  6. Brush the turbans generously with melted butter.
  7. Bake at 350°F for 15 to 20 minutes or until the fish flakes easily with a fork.
  8. Remove from oven and drain off any excess liquid.
  9. Top with Hollandaise sauce and sprinkle with paprika before serving.
