Ingredients

  • 2 1/2 cups cubed cooked turkey
  • 1 1/2 cups sliced fresh mushrooms
  • 1 cup chopped celery
  • 2 tablespoons sliced pimiento-stuffed olives
  • 1/3 cup mayonnaise or salad dressing
  • 1 tablespoon lemon juice
  • 1 teaspoon finely chopped onion
  • romaine leaves
  • 1/2 teaspoon salt

Instructions

  1. Combine the cubed cooked turkey, sliced mushrooms, chopped celery, and sliced pimiento-stuffed olives in a bowl.
  2. In a separate small bowl, blend together mayonnaise or salad dressing, lemon juice, chopped onion, and salt.
  3. Add the dressing mixture to the turkey mixture and toss lightly to combine.
  4. Chill the salad in the refrigerator for at least 30 minutes.
  5. Line a serving bowl with romaine leaves.
  6. Spoon the turkey-mushroom salad onto the romaine-lined bowl and serve.
