Ingredients

  • 6 turkey breast slices
  • 1 1/3 cups seasoned bread crumbs
  • 1/3 cup Parmesan cheese
  • 3 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 8 oz can tomato sauce
  • 6 slices Mozzarella cheese
  • olive oil
  • 1/4 cup hot water

Instructions

  1. Pound the turkey breast slices and set aside.
  2. Mix seasoned bread crumbs and Parmesan cheese and set aside.
  3. Combine eggs, salt, and white pepper.
  4. Coat each turkey breast slice with the bread crumb mixture, then dip into the egg mixture, and coat again with the bread crumb mixture.
  5. Place the coated turkey slices on wax paper.
  6. Let stand for 20 to 30 minutes, turning several times.
  7. Heat oil in a skillet over medium heat.
  8. Fry the turkey slices until golden brown on both sides.
  9. Add 1/4 cup hot water to the pan, cover, and cook slowly for about 30 minutes until tender.
  10. Arrange the cooked turkey slices in a baking dish.
  11. Pour two spoonfuls of tomato sauce over each slice.
  12. Place a slice of mozzarella cheese over the sauce.
  13. Bake in a 400°F oven for about 10 minutes until the cheese is melted.
