Turkey Rice Broccoli Casserole

Ingredients

  • 2 turkey legs or 1 leg and 1 wing
  • broth
  • water
  • 1/2 tsp turmeric
  • 1 large onion, chopped
  • 2 large stalks celery with leaves, chopped
  • 2 medium or 1 large stalk fresh broccoli, sliced in 3/8-inch pieces
  • 1 cup plain rice
  • 2 cans cream of mushroom soup

Instructions

  1. Roast the turkey until the meat falls off the bone.
  2. Remove the meat from the bone and cut it into bite-sized pieces.
  3. Add enough water and broth to make 2 1/4 to 2 1/2 cups of liquid.
  4. Add turmeric, chopped onion, chopped celery, and sliced broccoli to the liquid.
  5. Place the rice on top of the broccoli in the casserole dish.
  6. Push the rice just under the broth, cover, and bring to a boil.
  7. Cook for 10 to 15 minutes or until the rice is just done.
  8. Add the cream of mushroom soup to the casserole.
  9. Top with grated cheese.
  10. Bake at 350°F until hot and the cheese is melted.
