Instructions

  1. Place each turkey steak between sheets of waxed paper and pound with a meat mallet until about 1/4 inch thick.
  2. Sprinkle with salt and pepper if desired.
  3. Use a heavy skillet large enough to hold all turkey slices in one layer or use 2 skillets.
  4. Heat the olive oil and 1 tablespoon of the margarine in the skillet.
  5. Add turkey slices, garlic, bay leaf, and thyme to the skillet.
  6. Cook over medium-high heat for about 5 minutes or until lightly browned on both sides.
  7. Remove turkey to a serving platter and keep warm.
  8. Leave the other ingredients in the pan.
  9. Add the white wine to the pan and cook over high heat until reduced to half.
  10. Stir often to incorporate the browned bits from the skillet.
  11. Add the chicken broth and boil until reduced by half.
  12. Stir in the remaining margarine, capers, and chopped parsley.
  13. Return the turkey to the skillet and reheat briefly.
  14. Remove the bay leaf before serving.
