Ingredients

  • 8 fresh turnips, peeled and sliced
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/4 cup chopped onion
  • 2 tablespoons butter, melted
  • 1/4 cup milk
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon salt

Instructions

  1. Combine turnips, water, and salt in a saucepan; bring to a boil.
  2. Cover and cook over medium heat for 40 minutes or until tender.
  3. Drain well.
  4. Preheat oven if baking the pudding in a dish.
  5. Mix cooked turnips with chopped onion, melted butter, milk, eggs, and salt.
  6. Pour the mixture into a greased baking dish.
  7. Bake at 350°F (175°C) for about 30 minutes or until set and golden on top.
