Ingredients

  • 4 baking potatoes
  • 3 green onions, sliced
  • 2 Tbsp butter or margarine
  • 1/2 cup hot milk
  • 1/2 tsp salt
  • dash black pepper
  • dash nutmeg
  • dash paprika
  • 4 slices bacon
  • 2 Tbsp grated Parmesan cheese
  • 2 Tbsp grated sharp Cheddar cheese

Instructions

  1. Wash potatoes and pat dry.
  2. Prick each potato with a fork.
  3. Bake on a rack at 400°F for 1 hour or until potatoes are done.
  4. Cut a thin slice from the top of each potato and scoop out the pulp into a bowl.
  5. Mash potato pulp with hot milk until fluffy.
  6. Beat in butter and sliced green onions.
  7. Add salt, black pepper, nutmeg, and paprika to seasonings.
  8. Fry bacon until crisp and crumble.
  9. Add crumbled bacon to the potato mixture.
  10. Spoon the potato mixture back into the potato shells.
  11. Sprinkle grated Parmesan and Cheddar cheeses on top.
  12. Place potatoes on a baking sheet.
  13. Bake at 375°F until cheeses are melted and bubbly.
