Creamy, cheesy twice-baked potatoes with green onion and paprika offer comforting flavor and crispy tops, perfect for gatherings or hearty family dinners.

Ingredients

  • 2 large baking potatoes
  • 1/4 cup buttermilk
  • 2 teaspoons margarine
  • 1 green onion
  • 1/8 teaspoon white pepper
  • 1 tablespoon Parmesan
  • paprika

Instructions

  1. Bake the potatoes in a 350°F oven until tender, about 1 1/2 hours.
  2. Cool slightly, then halve each potato lengthwise and scoop the potato into a medium bowl, reserving the skins.
  3. Thinly slice the green onion, reserving some for garnish.
  4. With an electric mixer, whip the potatoes, buttermilk, margarine, green onion, white pepper, and a little salt if desired.
  5. Spoon the mashed potato mixture into the reserved potato skins.
  6. Sprinkle with Parmesan cheese and paprika.
  7. Bake for 20 minutes or until golden brown on top.
  8. Sprinkle with additional green onion before serving.
