- Bake the potatoes in a 350°F oven until tender, about 1 1/2 hours.
- Cool slightly, then halve each potato lengthwise and scoop the potato into a medium bowl, reserving the skins.
- Thinly slice the green onion, reserving some for garnish.
- With an electric mixer, whip the potatoes, buttermilk, margarine, green onion, white pepper, and a little salt if desired.
- Spoon the mashed potato mixture into the reserved potato skins.
- Sprinkle with Parmesan cheese and paprika.
- Bake for 20 minutes or until golden brown on top.
- Sprinkle with additional green onion before serving.
