Twice cooked potatoes are a hearty, cheesy dish featuring baked potatoes stuffed with a flavorful onion and red pepper mixture, perfect for comfort food enthusiasts and family dinners.

Ingredients

  • 1 onion, chopped
  • 1/4 tsp. red pepper, ground
  • 1 stick margarine
  • 1 cup grated sharp cheese

Instructions

  1. Bake potatoes at 450°F uncovered for 1 hour.
  2. Saute chopped onion and ground red pepper in margarine until the onion is transparent.
  3. Scoop out the insides of the baked potatoes and mix with the sautéed onion and red pepper.
  4. Add grated cheese and enough milk to make the mixture fluffy.
  5. Mound the mixture into the potato shells.
  6. Bake the stuffed potatoes at 350°F until heated through and bubbly.
