Ingredients

  • 1 cup dry small white beans
  • 1 cup dry kidney beans
  • 2 quarts water
  • 1 smoked ham hock
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 3/4 cup diced celery
  • 3/4 cup diced carrots
  • 1/8 teaspoon crushed red pepper
  • 1 1/2 cups milk
  • salt

Instructions

  1. Soak the beans in water overnight or for a quick soak, bring the beans and water to a boil for 2 minutes.
  2. Cover and let stand for 1 hour, then add the smoked ham hock to the beans.
  3. Cover and simmer for 1 1/2 hours.
  4. Remove the ham hock and cut up the meat.
  5. Mash a portion of the beans in the pot.
  6. Return the meat to the soup.
  7. Add chopped onion, minced garlic, diced celery, diced carrots, and crushed red pepper.
  8. Cover and simmer for 1 hour.
  9. Add milk and heat through.
  10. Season with salt and pepper to taste.
