Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg, slightly beaten
  • 2/3 cup milk
  • 1 fryer chicken, cut up
  • 1 quart corn oil

Instructions

  1. Sift together the flour, baking powder, and salt.
  2. Mix the egg, milk, and 1 tablespoon of corn oil.
  3. Add the egg mixture to the flour mixture and beat until smooth.
  4. Dip the chicken pieces into the batter, coating completely. Drain excess batter.
  5. Pour the corn oil into a deep fryer or 3-quart saucepan.
  6. Heat the oil to 375°F (190°C).
  7. Carefully add the coated chicken pieces to the hot oil, a few at a time.
  8. Fry about 4 minutes until golden brown; drain on paper towels.
  9. Place the fried chicken in a shallow baking pan and bake in a 350°F oven for about 30 minutes or until tender.
