Ingredients

  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla
  • 1 teaspoon nutmeg
  • 1/4 pound butter or margarine
  • 1/2 cup milk
  • 2 eggs, separated
  • 1 unbaked 9-inch pastry shell

Instructions

  1. Mix white sugar, brown sugar, and cornstarch together in a saucepan.
  2. Add milk and cook over medium heat until slightly thickened.
  3. Remove from heat and stir in butter or margarine and egg yolks.
  4. Bring the mixture to a boil, stirring constantly.
  5. In a separate bowl, beat egg whites until stiff peaks form.
  6. Remove custard from heat and gently fold in beaten egg whites, vanilla, and nutmeg.
  7. Pour the filling into the unbaked pastry shell.
  8. Bake at 325°F (160°C) until the pie is firm and golden brown, about 30 to 35 minutes.
