Ingredients

  • 2 (8 oz.) packages cream cheese
  • 8 oz. whole milk ricotta cheese
  • 16 oz. sour cream
  • 4 egg yolks
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 4 beaten egg whites
  • graham cracker crust

Instructions

  1. Cream the cream cheese and ricotta cheese together until smooth.
  2. Add the sour cream, egg yolks, sugar, and vanilla; mix well.
  3. Fold in the beaten egg whites gently.
  4. Pour the mixture into a 10-inch spring-form pan over the graham cracker crust.
  5. Bake in a preheated 325°F oven for 60 minutes.
  6. Turn off the oven and let the cheesecake rest in the oven for 10 minutes.
  7. Open the oven door and allow the cake to cool in the oven.
  8. Refrigerate for 1 to 2 days to allow the flavors to ripen before serving.
